homemade bruschetta.

 I don’t think I’m much of  cook, but there are a few things I make that are really really good.

Bruschetta is one of them.

You guys, this is such a simple recipe, you can throw it together in about 10 minutes, and my whole family loves it.  I make my french bread ahead of time and then it’s easy peasy quick.

And any recipe that involves  warm french bread and melty cheese with fresh tomatoes and basil smothered all over the top gets two enthusiastic thumbs up from me.

My mouth is watering just thinking about it.

Homemade Bruschetta:

3-5 tomatoes

2 cloves of garlic (minced)

A handful of fresh basil leaves (chopped)

1 TBSP Extra Virgin Olive Oil

1tsp balslamic vinegar (I always add a dash more)

salt and pepper to taste

1 loaf of french bread. (find my recipe here.)

1/4 cup extra virgin olive oil. (evoo)

Sliced mozzarella cheese

Directions:

Prepare tomatoes, slice, seed and chop.  in a large bowl add garlic, basil, vinegar, and evoo then set aside.

Preheat oven to 450 degrees.

Slice bread 1/2 an inch thick, coat one side with evoo. Place on a cookie sheet oil side down.  Toast on the top rack of the oven 5-6 minutes or until bread is golden brown.

Take bread out, and flip it oil side up.  Place sliced mozzarella on top and put back in the oven for 1 minute (just long enough to melt the cheese a little.)

Remove from oven and generously scoop tomato mixture onto the top of bread.

    First thing first: you’re awesome, and brave and funny and fashionable and a lot of more beautiful things … but … please … please … please you can’t ruin a magnificent tomato bruschetta putting cheese on it! ;))
    Also … believe me (100% italian here) that cheese is no mozzarella ;(
