Taco Tuesday: Jimboy’s tacos copycat recipe.

I grew up in northern California and there is an amazing taco joint there called Jimboy’s tacos.  They make my all-time favorite tacos and honestly anytime I think about street tacos, I crave a little Jimboy’s action.  But since I live approximately 3,000 miles from the closest Jimboy’s, that’s not really an option.  When my mom came to visit us in June, she shared this copycat recipe with me, (which I’m pretty sure she made up, because my mom has MAD SKILLS in the kitchen.). These tacos are so, so, so good and taste just like those amazing Jimboy’s tacos, so basically what I am saying is, go make these immediately.

Seriously, if tacos are your thing, (her even if they’re not) you’re gonna love these.

To make:

You’re going to need: 1 lb ground beef, corn tortillas, a 15 oz can of tomato sauce, an onion, onion powder, taco seasoning (I use McCormick), grated Mexican cheese blend, parmesan cheese, butter or olive oil spray and whatever you like to garnish your taco with (i.e. sour cream, lettuce, etc.)

Throw the ground beef into a pan to brown over medium high heat.  Chop the onion and throw it in with the meat, get it nice and brown. Once the meat is brown you are going to pour in the can pf tomato sauce, onion powder and taco seasoning (to taste- I use probably a tablespoon of taco seasoning and 1/2 teaspoon of onion powder), cover and simmer 5-6 minutes over low heat, stirring occasionally.  Heat up a flat skillet/pan.  Butter both sides of your corn tortilla (or spray both sides with olive oil).  Sauté one side of the corn tortilla until lightly browned, then flip.  Fill one side with meat, sprinkle with grated Mexican blend cheese, then fold in half and sprinkle the top with parmesan. Let it sit on the grill for 1-2 minutes and then remove.  Garnish as you like and enjoy!
