If you are looking for a last minute 4th of July dessert, these mixed berry mini trifles are just what the doc, er, chef ordered. They’re super easy, quick to make, require basically no cooking and are so yummy. They’re sure to be a hit with the firework crowd this evening…

What I love about this mini trifle recipe: they’re light and fresh, perfect for a summer BBQ, so easy to make (seriously, you can make them in under 10 minutes), the end results are so dang cute, and they’re super yummy. I love using blueberries and strawberries for a fun and patriotic flare, and the two berry flavors really compliment each other nicely.

You can make this mini trifle recipe in small jars (I think it’s a cute classic Americana touch), but that’s not a requirement. They’d work in disposable baking cups or just classic glasses. I would recommend using a glass that’s clear so everyone can appreciate your pretty layers.

I know some recipes say they are “quick and easy” and turn out to be anything but, but trust me when I say, this one actually is so extremely easy. Here’s how you make it:

Grab a store bought pound cake (I bought a Sara Lee pound cake in the freezer section), some small jars, strawberries, blue berries, heavy whipping cream and a little bit of sugar.

Using a hand mixer, whip 2-3 cups of heavy whipping cream with a couple teaspoons of sugar (add sugar to taste, depending on how sweet you like your whipped cream), until peaks form into whipped cream. Don’t over-whip or the cream curdles, you want it to just stiffen. Once the cream is whipped, slice the pound cake in the middle down the length of the cake (so it’s half the height/thickness). Then use a biscuit cutter to cut circles out of two halves (if you don’t have a biscuit cutter just cut the pieces into strips.).

Now you layer your jars. Put one layer of cake on the bottom followed by a layer of blue berries, then whipped cream. Add another layer of pound cake, then a layer of strawberries and top with whipped cream. Add a few more berries as a garnish and voilà! That’s it! The cutest little star-spangled treat on the block!
